Whats For Dinner? 5/19/2011

Hey all! =) Well tonight we tried something completely new and different! It was a HUGE hit in our house. Idk what to call this, so we'll just call this a Chicken & Rice Bake.
What You Need:
  • 2 Packages of the Garlic Croissant
  • 2 Packages of Creamy Chicken Rice
  • 2 Chicken Breasts
Directions.
1. In one saucepan, fill it with water and add your chicken. Your going to want to boil it until its cooked thoroughly. It usually takes 20-30 minutes.
In another saucepan, prepare rice as directed.
2. Get a round cookie sheet, and spread the croissants to look someone like this.
 
3. Once the chicken is finished, shred it and add it to the rice. Spread it on the thicker part of the ring in a circle. It should look somewhat like this.

4. Fold the remaining croissant pieces over.

5. Bake at 375 for 12-15 Minutes.

Whats for Dinner? 5/18/2011

Hey y'all, so today was a long and hectic day! Noah had a tendon release surgery on his left foot. They cut the tendons in 3 spots so hopefully once its all healed it will get him on the right track to walking. We got home and it started raining and hailing... YES, HAILING, in Las Vegas, IN MAY! So of course I was gonna take the opportunity and make a warm comfort food! So for dinner we had...
 Hamburger Potato Soup!
It was fabulous!

What you'll need:
  • 6 cups diced potatoes

  • 3 stalks celery, diced

  • 1 cup chopped onion

  • 3 (14.5 ounce) cans chicken broth, divided

  • 4 cups half-and-half cream

  • 6 tablespoons butter, melted

  • 6 tablespoons all-purpose flour

  • 4 cubes chicken bouillon

  • 1/2 teaspoon ground black pepper

  • 1lb Hamburger


  • Directions:
    1. In a large pot, bring potatoes, celery and onion to a boil in 2 cans of broth. Cook until potatoes are tender, 15 minutes.. At the same time, cook your hamburger in a skillet.
    2. Combine broth and half-and-half in pot. In a bowl, combine melted butter and flour (I ended up adding corn starch to make it a bit thicker). Stir into half-and-half mixture over medium heat. Stir until thickened.. Pour into your large pot with potatoes, add hamburger and stir until heated, I also added a bit of sharp cheddar cheese! It was definitely a hit with my husband and kiddo!
